Ingredients


Makes: 8 C (2 L)
  • 8 C (2 L) Chicken Broth, prepared
  • 1/3 C (80 ml) diced carrots
  • 1/3 C (80 ml) diced celery
  • 1 bay leave
  • 1/2 lb (225 g) boneless, skinless chicken thighs or breasts, cut into bite-sized pieces
  • 1 C (250 ml) fine egg noodles or gluten-free noodles
  • 2 tsp (10 ml) parsley

Preparation


 
  • Combine first four ingredients in Multipurpose Pot - 12 C over medium-high heat. Bring to a boil.
  • Stir in chicken, reduce heat and simmer 5 minutes to ensure chicken is cooked.
  • Stir in noodles and simmer soup an additional 5 minutes.
  • Stir in parsley and serve immediately.
  • SAY GOODBYE TO MUSHY NOODLES FOREVER! The noodles will continue absorbing liquid from the leftover soup as it cools, gradually becoming softer and mushier. If you don’t like mushy noodles in your leftover soup, keep the pasta and soup separate and add the pasta to bowls individually.
