Ingredients


Makes: 4 servings
  • 2 C (500 ml) cooked quinoa
  • 1/2 lb (225 g) Southern BBQ Chicken, prepared, cubed
  • 8 C (2 L) mixed, fresh seasonal vegetables, sliced or chopped
  • 2 C (500 ml) Black Bean & Corn Salsa, prepared
  • 1/4 C (60 ml) Pico Salsa, prepared
  • 1/4 C (60 ml) Guacamole, prepared
  • 1/2 C (125 ml) cheese, your choice
  • 1/4 C (60 ml) Adobo Sauce , prepared
  • Toppings: Lime juice and cilantro, optional

Preparation


 
  • Portion quinoa evenly between four serving bowls.
  • Divide the chicken, veggies, salsas, and Guacamole evenly on top of the quinoa.
  • Sprinkle each bowl with cheese and drizzle Adobo Sauce on top. Add a squeeze of lime juice and sprinkle with cilantro, if desired. Serve.

Hack: No BBQ chicken? Use shredded rotisserie chicken.
