Ingredients


Makes 4 servings
  • 2 Tbsp (30 ml) olive oil, divided
  • 1 lb (450 g) fish fillets
  • Black Pepper (Grinder), to taste
  • 1/2 C (125 ml) diced tomatoes
  • 2 tsp (10 ml)

Preparation


 
  • Heat 1 Tbsp (15 ml) oil in Fry Pan over medium-high heat.
  • Lightly season fish with Black Pepper and place in pan.
  • Combine tomatoes, Pesto Herb Mix and remaining oil in a small mixing bowl. Spoon over fillets.
  • Cover pan and cook for 8–10 minutes, or until fish is opaque.
  • Tip: Thanks to its high basil content, 1 Tbsp (15 ml) Pesto Herb Dip Mix has more antioxidants than 1/2 C (125 ml) chopped sweet cherries.
